Dirty Rice – An incredibly  rich and tasty one pot rice  meal made  from scratch with aromatics , seasoned with creole spices and fortified with ground beef , chicken livers and bacon.   Liver haters you are going to love this too! 

Dirty Rice? What can I say. If  you are into  looks , then you are not going to give this a second thought. BUT if you are just like me and want BIG BOLD FLAVORS then my friend , you need to start planning your next meal . Cause this is IT!  

This Dirty Rice Recipe is a Classic Soul Food that has been present for centuries. It’s a one-pot meal that deserves a place on your dining table for weeknight meals  and/or  Celebratory meals.

It’s Flavorful, with a lots  of texture, one of those rice recipes that always makes an appearance  in my house.

No, it’s not what you think! Not the messy (dirty) stuff, of course. I wouldn’t do that to you my lovely peeps.

It’s name might leave you thinking twice, but this Dirty Rice — originating in Southern Louisiana– is a blend of white rice, mixed with spices and aromatics and added with small pieces of meat like chicken liver and gizzards and ground beef or sausage .

The addition of the liver and ground beef  gives it’s “dirty” look — something you wouldn’t expect for cooked rice.

Over the years, this flavorful rice meal has evolved with a lot of variations. Here, I used chicken liver, ground beef and  chopped bacon to boost the flavor of the other meats , not that you need bacon, I just love it !   In fact, you can make it without it if it’s not available

Prep Time 15 minutes
Cook Time 25 minutes



  1. In a large, heavy sauté pan, saute chopped bacon until cooked about 4-5 minutes- set aside

  2. Then add 2 tablespoons of the oil or more oil to bacon pan.

  3. Throw in the onions , thyme , bay leaf and garlic , saute for about 2-3 minutes

  4. Add chicken liver and ground beef, creole seasoning . and cook, stirring, for about 2 minutes .

  5. Add bell peppers, celery , salt and pepper. Cook, stirring, for 5 minutes.Pour in about 1 cup cup stock .

  6. Bring to a boil, then lower the heat and simmer for about 5 minutes.

  7. Finally add rice, mix thoroughly. Cook until the rice is heated through, about 5-7 minutes. Do not overcook the rice. Remove from the heat and remove the bay.

  8. Stir in the parsley and serve
